Crack Chicken

Ingredients
2 – 3 pounds chicken breasts 3 – 4 breasts
½ cup chicken broth (not needed for stove top method)
16 ounces cream cheese cubed
2 packets dry ranch seasoning
8 ounces bacon cooked crispy and crumbled
1 cup shredded cheddar cheese
½ cup chopped green onions

INSTANT POT DIRECTIONS
Combine chicken broth, chicken breasts, cream cheese, and ranch seasoning in your instant pot. Seal the instant pot and set it to manual (high pressure) for 15 minutes. Let the pressure release naturally for 10 minutes. (If you often encounter the burn notice on your instant pot, you can include up to a full cup of water). Take out the chicken and shred it. Whisk the liquid in the bottom of the instant pot until the cream cheese is completely mixed. (If you added a full cup of water initially, switch your pot to the ‘saute’ function and allow some of the liquid to simmer off). Put the shredded chicken back into the pot and add bacon, cheese, and green onions. Mix until everything is well combined. The sauce will thicken as it sits.

SLOW COOKER DIRECTIONS

Place chicken broth, chicken breasts, cream cheese, and ranch seasoning in your slow cooker. Cover the slow cooker and cook on low for 6 – 8 hours or on high for 4 – 5 hours. Take out the chicken and shred it. Whisk the liquid in the bottom of the slow cooker until the cream cheese is completely mixed. Put the shredded chicken back into the slow cooker. Add bacon, cheese, and green onions. Stir until everything is combined. The sauce will thicken as it sits.

STOVE TOP DIRECTIONS
Boil a pot of water. Add chicken and simmer for about 15 minutes until it easily shreds. Save 1/2 cup of the boiling liquid and drain the rest. Shred the chicken and set it aside. In the same pot, add 1/2 cup of the reserved liquid, cream cheese, and ranch seasoning. Bring it to a low simmer and whisk until everything is well combined. (You can use an electric mixer or immersion blender to speed up this process.) Return the shredded chicken to the pot. Add bacon, cheese, and green onions. Stir until everything is mixed. The sauce will thicken as it sits.
