Ingredients:
2 medium-sized zucchinis
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
2 eggs
1 cup milk
2 tablespoons butter, melted
1/4 cup grated Parmesan cheese

Instructions:
Grate the zucchinis and squeeze out any excess moisture using paper towels.
In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, and onion powder.
In a separate bowl, beat the eggs and then whisk in the milk and melted butter.
Pour the wet ingredients into the dry ingredients and stir until well combined.
Add the grated zucchini and Parmesan cheese to the mixture and stir until evenly distributed.
Heat a non-stick skillet over medium-high heat and add a tablespoon of olive oil.
Pour about 1/4 cup of the batter onto the skillet and spread it out into a thin layer using a spatula.
Cook the crepe for about 2-3 minutes on each side or until lightly browned.
Repeat steps 6-8 until all the batter has been used.
Serve the crepes hot with your favorite toppings, such as sour cream, salsa, or fresh herbs.
