Ingredients:
4 large baking potatoes
1 cup shredded cheddar cheese
1/2 cup sour cream
4 slices bacon, cooked and crumbled
2 green onions, chopped
Salt and pepper to taste
Optional toppings: additional shredded cheese, chopped chives, or chopped cooked bacon
Instructions:
Preheat your oven to 400°F (200°C).
Wash the baking potatoes thoroughly and pat them dry. Pierce each potato several times with a fork to allow steam to escape during baking.
Place the potatoes directly on the oven rack and bake for about 50-60 minutes or until they are tender when pierced with a fork.
Remove the potatoes from the oven and let them cool for a few minutes until they are safe to handle. Reduce the oven temperature to 350°F (175°C).
Cut each potato in half lengthwise. Carefully scoop out the flesh from the center of each potato half, leaving about a 1/4-inch thick shell.
In a bowl, mash the scooped-out potato flesh. Add the shredded cheddar cheese, sour cream, crumbled bacon, green onions, salt, and pepper. Mix well until all the ingredients are combined.
Spoon the potato mixture back into the potato shells, dividing it evenly among them. You can mound the filling slightly.
If desired, sprinkle additional shredded cheese on top of each stuffed potato.
Place the stuffed potatoes on a baking sheet and bake them in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
Remove the stuffed potatoes from the oven and let them cool for a few minutes. Garnish with chopped chives or chopped cooked bacon if desired.
