Sweet Potato Pie

This slightly sweet take on the traditional Southern pie boasts a crunchy crust and a surprisingly airy filling. Abundantly infused with egg and boldly seasoned with nutmeg, it maintains a light and fluffy texture reminiscent of chiffon, thanks to the inclusion of baking powder in the filling. As a result, you may find yourself tempted to indulge in a second (or even a third) slice.

INGREDIENTS

  • 3medium sweet potatoes, peeled (about 1¾ pounds)
  • 5tablespoons butter, at room temperature
  • ¾cup sugar
  • 1¼teaspoons freshly ground nutmeg
  • 1large egg
  • ½teaspoon vanilla
  • 2¼teaspoons baking powder
  • 3tablespoons evaporated milk

PREPARATION

  1. Step 1: Start by placing the sweet potatoes in a large saucepan and covering them with water. Bring the water to a boil, then reduce the heat to low and let the sweet potatoes simmer until they become very tender, which should take around 45 minutes. Once they’re done, drain them thoroughly.
  2. Step 2: Next, take the cooked sweet potatoes and mash them in a bowl. You should end up with approximately 2¾ cups of mashed sweet potatoes.
  3. Step 3: Preheat your oven to 350 degrees. Add the butter to the mashed sweet potatoes while they’re still hot, and mash until you achieve a smooth consistency. Then, incorporate the sugar, nutmeg, egg, and vanilla, ensuring everything is well mixed. Combine the baking powder with the evaporated milk and stir until they are fully blended. Add this mixture to the mashed sweet potatoes and whisk until you have a velvety smooth filling.
  4. Step 4: Transfer this filling into the pie shell, and make sure to spread it evenly to reach the edges.
  5. Step 5: Bake the pie until it sets and becomes lightly browned on top, typically taking around 55 minutes. Allow it to cool to room temperature before serving.
