Ingredients:
1 package (8 ounces) cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream
2 cups strawberries, hulled and sliced
1 cup blueberries
1 cup mini marshmallows
Optional: additional fresh mint leaves for garnish
Instructions:
In a large mixing bowl, beat the softened cream cheese until smooth.
Add the powdered sugar and vanilla extract to the cream cheese and continue to beat until well combined.
In a separate mixing bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until well incorporated.
Add the sliced strawberries, blueberries, and mini marshmallows to the bowl and gently fold them into the creamy mixture.
Make sure the fruit and marshmallows are evenly distributed.
Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together and the salad to chill.
Before serving, give the salad a gentle stir to combine any separated liquids and fluff up the mixture.
Optional: Garnish with fresh mint leaves for added freshness and presentation.
