This easy Lemon Mousse is the perfect way to welcome spring! Light, and delicious dessert.
Ingredients
1/2 cup granulated sugar
1 tsp. unflavored gelatin
1 Tbsp. cold water
2 Tbsp. boiling water
2 Tbsp. fresh lemon juice
1 tsp. lemon extract
1 cup heavy cream, very cold
Instructions
Sprinkle gelatin over cold water in small bowl; stir and let stand 1 minute to soften.
Add boiling water; stir until gelatin is completely dissolved. Mixture will be clear.
In a large cold mixing bowl, combine granulated sugar, lemon juice, lemon extract, and heavy cream.
Beat at medium speed until stiff peaks form; pour in gelatin mixture and beat until well blended.
Spoon or pipe into individual serving dishes.
Cover loosely and chill 1 hour or until ready to serve.
Garnish with fresh berries and/or whipped cream as desired.
