Grilled Huli Huli Chicken

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/3 cup ketchup
  • 1/4 cup chicken broth
  • 2 teaspoons fresh ginger, grated
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh pineapple slices, for serving (optional) Instructions
  1. Whisk pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, garlic, sesame oil, and red pepper flakes in a bowl.
  2. Reserve 1 cup of the marinade for basting and pour the rest over the chicken breasts in a zip-top bag. Marinate for at least 1 hour.
  3. Preheat grill to medium-high heat.
  4. Remove chicken from marinade, season with salt and pepper, and grill for 6-7 minutes on each side, basting with the reserved marinade, until cooked through.
  5. Let the chicken rest for a few minutes before slicing.
  6. Serve with grilled pineapple slices for an authentic touch.
