Chocolate Chia Seed Cheesecake Mousse

Ingredients:

  • For the Mousse:
  • 4 eggs
  • 3 tablespoons cocoa powder
  • 1 tablespoon cornstarch
  • 2 teaspoons stevia
  • For the Filling:
  • 350 g cottage cheese (or low-fat cream cheese)
  • 100 g yogurt
  • 10 g gelatin + 100 ml water
  • 2 tablespoons chia seeds
  • Any sweetener to taste

Directions:

  1. In a mixing bowl, separate the egg yolks from the whites. Set aside the egg whites for later use.
  2. To the egg yolks, add the cocoa powder, cornstarch, and stevia. Whisk until smooth and well combined.
  3. In a separate bowl, beat the egg whites until stiff peaks form.
  4. Gently fold the beaten egg whites into the cocoa mixture until no streaks remain. Set aside.
  5. In another bowl, combine the cottage cheese (or low-fat cream cheese) and yogurt. Mix until smooth and creamy.
  6. In a small bowl, sprinkle the gelatin over the water and let it bloom for 5 minutes. Microwave for 10-15 seconds until the gelatin is dissolved, then stir it into the cottage cheese mixture.
  7. Add the chia seeds to the mixture and stir until evenly distributed.
  8. Carefully fold the chocolate mousse mixture into the cottage cheese mixture until fully incorporated.
  9. Taste the mixture and add any additional sweetener if desired.
  10. Divide the mixture into serving glasses or bowls and refrigerate for at least 4 hours, or until set.
  11. Serve the chocolate chia seed cheesecake mousse chilled, topped with fresh berries or whipped cream if desired.
