Luscious Lemon Apple Cake

Ingredients:

  • For the dough:
    • 5 eggs
    • 200g (1 cup) sugar
    • A pinch of salt
    • 210g (1.3 cup) flour
    • 1 teaspoon baking powder
    • 35g (2.5 tbsp) vegetable oil
    • The zest of a lemon
    • 50g (1/4 cup) boiling water
    • Baking pan 28x18cm
  • For the apple pudding:
    • 4 apples
    • 500ml (2 cups) apple juice
    • 60g (4 tbsp) sugar
    • 2 packets of vanilla flavored pudding (each 37g)
    • 400ml (1.6 cup) apple juice
  • For the chocolate topping:
    • 150g chocolate
    • 75g (1/3 cup) butter

Directions:

For the dough:

  1. Preheat the oven to 180℃ (356℉). Grease and flour a baking pan (28x18cm).
  2. In a mixing bowl, beat together the eggs, sugar, and salt until pale and fluffy.
  3. Sift in the flour and baking powder. Add the vegetable oil and lemon zest. Mix until smooth.
  4. Gradually pour in the boiling water while mixing continuously until well combined.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake in the preheated oven for about 30 minutes, or until a toothpick inserted into the center comes out clean. Let it cool completely. For the apple pudding:
  7. Peel, core, and chop the apples into small pieces.
  8. In a saucepan, combine the chopped apples, 500ml of apple juice, and sugar. Cook until the apples are soft.
  9. In a separate bowl, dissolve the vanilla flavored pudding packets in 400ml of apple juice.
  10. Pour the pudding mixture into the saucepan with the cooked apples. Stir continuously until the mixture thickens. Remove from heat and let it cool slightly.
  11. Pour the apple pudding over the cooled lemon cake in the baking pan. Spread it evenly and refrigerate for at least 4 hours to set. For the chocolate topping:
  12. Melt the chocolate and butter together in a heatproof bowl over a pot of simmering water, stirring until smooth.
  13. Let the chocolate mixture cool slightly, then pour it over the set apple pudding layer.
  14. Return the cake to the refrigerator and chill for another 4 hours, or until the chocolate topping is set.
