- 10 g gelatin + 100 ml water
- 2 tablespoons chia seeds
- Any sweetener to taste

Directions:
- In a mixing bowl, separate the egg yolks from the whites. Set aside the egg whites for later use.
- To the egg yolks, add the cocoa powder, cornstarch, and stevia. Whisk until smooth and well combined.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the cocoa mixture until no streaks remain. Set aside.
- In another bowl, combine the cottage cheese (or low-fat cream cheese) and yogurt. Mix until smooth and creamy.
- In a small bowl, sprinkle the gelatin over the water and let it bloom for 5 minutes. Microwave for 10-15 seconds until the gelatin is dissolved, then stir it into the cottage cheese mixture.
- Add the chia seeds to the mixture and stir until evenly distributed.
- Carefully fold the chocolate mousse mixture into the cottage cheese mixture until fully incorporated.
- Taste the mixture and add any additional sweetener if desired.
- Divide the mixture into serving glasses or bowls and refrigerate for at least 4 hours, or until set.
- Serve the chocolate chia seed cheesecake mousse chilled, topped with fresh berries or whipped cream if desired.
