Pecan Log Roll

Ingredients:

1 cup pecans, chopped
1 cup confectioners’ sugar
1/2 cup unsalted butter, softened
1 teaspoon vanilla extract

2 cups graham cracker crumbs
1 cup sweetened condensed milk
Additional confectioners’ sugar for dusting

Instructions:

In a mixing bowl, combine the chopped pecans, confectioners’ sugar, softened butter, and vanilla extract. Mix well.
Add the graham cracker crumbs and sweetened condensed milk to the bowl. Stir until all the ingredients are thoroughly combined.

Shape the mixture into a log shape, approximately 8-10 inches long, on a sheet of wax paper.
Roll the log in the wax paper, twisting the ends to secure it tightly. Refrigerate for at least 2 hours or until firm.
Once the log is firm, remove it from the refrigerator and unwrap the wax paper.

Dust a clean surface with confectioners’ sugar and roll the log in the sugar, coating it evenly.
Slice the Pecan Log Roll into individual servings and serve.
