Ingredients:
1/2 cup creamy peanut butter
3 tablespoons salted butter, softened
1 cup powdered sugar
1 cup semi-sweet chocolate chips
1 tablespoon vegetable shortening or coconut oil (optional)
Directions:
Mix the Dough:
In a mixing bowl, combine the creamy peanut butter and softened butter. Gradually stir in the powdered sugar until fully combined and smooth. Cover the bowl and place it in the fridge for about 15 minutes to firm up the mixture.
Shape the Balls:
Once the dough is firm, use your hands to shape it into 1-inch balls. Place the balls on a baking sheet lined with wax paper. Cover and refrigerate for at least 20 minutes to help the balls hold their shape for dipping.
Melt the Chocolate:
Melt the semi-sweet chocolate chips in a microwave-safe bowl or using a double boiler, according to the package instructions. If you want a smoother consistency for dipping, add 1 tablespoon of vegetable shortening or coconut oil to the chocolate and stir until fully melted.
Dip the Balls:
Using a fork or dipping tool, dip each peanut butter ball into the melted chocolate, ensuring it is fully coated. Allow the excess chocolate to drip off before placing the chocolate-covered balls back onto the wax paper-lined baking sheet.
Chill and Serve:
Once all the balls are dipped, cover them and refrigerate until the chocolate is set. Serve chilled and enjoy!
